Both 9u (1,200 grit) and 15u (1,000 grit) sanding belts are excellent choices for knife sharpening, especially for the finishing stages: 1. 15u (1,000 grit) – This is ideal for refining an edge after coarser grits, shaping, or initial sharpening. It will help smooth out the edge and remove scratches from lower grits, getting the blade closer to a sharp finish. 2. 9u (1,200 grit) – This grit level is perfect for the final polishing of the edge, bringing it to a very sharp, refined state. It can create a near-mirror finish and fine, razor-sharp edge. For optimal results, you may want to work through a progression of coarser grits (like 240, 400, or 600) before moving to these finer grits, as this will ensure the blade has a well-shaped edge before polishing. After the 9u, some knife sharpeners also use a leather strop with compound to get a super sharp, polished edge.
